Two saffron recipes: rice and warm milk

Measured ingredients, a short infusion and clear steps for cooking saffron threads in rice or warm milk.

Safran marocain Argatherapy

Start with a small amount of saffron threads and prepare the infusion before the rest of the dish. Here are two recipe suggestions; adjust cooking to your rice, equipment and taste.

Saffron rice with onion

Serves 4 · Preparation: 10 min · Infusion: 15 min · Rice cooking: 15–18 min · Resting: 10 min. Prepare the infusion while you prepare the other ingredients.

Ingredients

  • 250 g — long-grain rice
  • 0.10 g — saffron threads
  • 500 ml — water in total, including the infusion
  • 80 g — finely sliced onion
  • 15 ml — olive oil
  • salt to taste

Method

  1. Gently crumble the saffron into a small bowl. Add 40 ml of lukewarm water, cover and leave to infuse for 15 minutes.
  2. Rinse and drain the rice. Soften the onion in the oil in a saucepan for about 5 minutes without browning it.
  3. Add the rice and stir for 1 minute. Pour in the remaining 460 ml of water, the infusion with its threads, and the salt. The total water volume is 500 ml.
  4. Bring to a gentle simmer, cover and cook over low heat for 15–18 minutes. If the rice packet recommends a different water quantity or cooking time, follow it and include the 40 ml infusion in the total liquid.
  5. Turn off the heat and leave covered for 10 minutes. Fluff gently with a fork and serve hot.

Warm saffron milk

Makes 2 cups · Preparation: 5 min · Infusion: 15 min · Allow about 20 min overall.

Ingredients

  • 500 ml — milk
  • 0.05 g — saffron threads
  • 10 g — sugar, optional

Method

  1. Take 40 ml from the 500 ml of milk and warm it until lukewarm. Add the lightly crumbled saffron, cover and infuse for 15 minutes.
  2. Gently heat the remaining 460 ml of milk without boiling. Add the infusion and threads, then the sugar if using.
  3. Stir and divide between two cups. This recipe contains milk and is unsuitable for anyone who needs to avoid it.

The pack size is not a recipe serving

The 2 g shown on the Argatherapy product page is the pack size. Use only the quantity your recipe calls for, then close the container away from steam, moisture and light. These recipes use culinary saffron threads, a separate product from saffron cream.
